The Miracle Fruit – Synsepalum dulcificum

What an interesting story I was just reading about this small red berry called Synsepalum dulcificum, but often referred to as the “miracle fruit” What this tiny berry does is rewires your taste buds and makes thinks that normally taste sour, extremely sweet. For instance you can eat one of these Synsepalum dulcificum berries and then bite into a lemon. Instead of puckering up like you are ready to kiss that hot girl across the table, you will be in a bliss of sweetness.

The berry actually will change the way the palate perceives the sour flavors we are so used to, and this change will last close to one hour after eating the berry. Bartenders have been experimenting with the fruit also. Don Lee, a beverage director at the East Village bar called “Please Don’t Tell,” has been making miracle fruit cocktails on his own time, but the bar probably won’t offer them anytime soon. The fruit is highly perishable and expensive. Thats right, real expensive. Approximately $2.25 per berry.

These Berries are also made into lozengers type tablets. Since the change in taste perception happens from the berry touching the tongue, rather then ingesting it, the tablets work like a charm when trying to alter tastes.
